Frozen Lavender Lemonade

No.9 Gin

Ingredients:

  • 4 oz Waterloo Gin, No. 9 
  • ½ cup lemon juice, freshly squeezed 
  • ¼ cup simple syrup 
  • lemon zest 
  • pinch of salt 
  • 2 cups ice 
  • 1 oz lavender simple syrup, for floater 
  • lemon slice, for garnish 
  • lavender sprig, for garnish

Lavender Simple Syrup: 

  • 1 cup water 
  • 1 cup granulated sugar 
  • 1 tbsp dried culinary lavender 
  • 2 drops of purple food coloring

Method:

To make the lavender simple syrup, combine the water, sugar, and lavender into a small saucepan. Bring to a gentle simmer, and stir until the sugar is dissolved. Remove from heat, cover, and let steep for 15 minutes. Strain out the lavender and set aside half of the simple syrup. With the other half, add two drops of purple food coloring and stir until combined. 

To make the frozen lemonade, add the gin, lemon juice, simple syrup (non-colored portion), lemon zest, a pinch of salt, and ice. Blend until thick and slushy like. Adjust sweetness to taste. 

Pour the blended lemonade into a chilled glass. Then slowly pour the purple lavender simple syrup over the back of a spoon to create a floater. Garnish with a lemon slice and a fresh lavender sprig. 

PRO TIPS:

Use crushed ice for a smoother blend.
Try a sugared rim with lemon zest for an extra flair!
