Grapefruit & Vanilla Gin Sour

Method:

To make the vanilla simple syrup, slice 1 vanilla bean lengthwise and scrape out the seeds. Add water, sugar, vanilla bean seeds, and the vanilla bean pod to a small saucepan. Bring to a gentle simmer and stir until sugar is dissolved. Gently simmer for 5 - 10 minutes. Remove from heat, cool to room temperature, and then strain. 

In a cocktail shaker add the Waterloo Gin, grapefruit juice, lemon juice, vanilla simple syrup, and egg white. Dry shake vigorously for 10 seconds. Add the ice and shake again until chilled. Strain into a chilled coupe glass and garnish with a grapefruit slice.
