Plum and Sage Old Fashioned

To make the plum sage simple syrup combine water, sugar, plum slices, and sage leaves in a pot. Bring to a gentle simmer, and stir until the sugar is dissolved. Remove from the heat, gently muddle the plum slices, and let steep for 15 minutes. Strain out the plum and sage leaves. Set aside and cool to room temperature.
In a mixing glass add simple syrup, gin, bitters, and ice. Stir with a bar spoon until chilled. Strain into a rocks glass filled with ice. Garnish with a plum slice. And gently slap the sage leaf between your hands before garnishing.
