Texas Blueberry Lemonade

Prickly Pear & Rose Gin

Ingredients:

*serves 6 - 8

  • 1 ½ cups Waterloo Gin, Prickly Pear & Rose
  • 1 ½ cups fresh lemon juice (~ 6 – 8 lemons)
  • 1 cup blueberry simple syrup
  • 1 cup water
  • lemon wheels, to garnish
  • fresh blueberries, to garnish
  • fresh mint, to garnish

Blueberry Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 cup blueberries

Method:

To make the blueberry simple syrup combine water, sugar, and blueberries in a pot. Bring to a gentle simmer and stir until the sugar is dissolved. Remove from the heat, gently muddle the blueberries, and let steep for 15 minutes. Strain out the blueberries. Set aside and cool to room temperature.

In a large pitcher add the gin, lemon juice, and simple syrup. Stir until ingredients are combined. Then add water and ice. Garnish the pitcher with additional fresh blueberries and lemon wheels.

Pour the lemonade into individual glasses filled with ice. Garnish with fresh mint.
